Q-GRADER

Ruben and Christoph are not only our passionate roasters, as of last year they are also our certified Q-graders. Q-graders are experts in the evaluation and tasting of coffee. They are specially trained to objectively assess the quality of coffee. In this video, they explain the process and how their skills play a pivotal part in forming the backbone of our roastery, so that both our baristi in the espresso bars and our customers can rely on consistent quality.

ROASTERY

Our coffee is freshly roasted every day at the ViCAFE Roastery in Zurich Altstetten. The coffee is then brewed to grab on the go at our Espresso Bars, and is also available from the ViCAFE Onlineshop and selected retailers. We individually roast our coffees according to type and only blend them after roasting. We procure the coffees we use to create both the Single Origin and Single Farm blends from coffee farmers with whom we strive to build close, personal relationships. We’re strongly committed to upholding fair and environmentally friendly production standards. 

Our roastery has steadily become bigger and better since its foundation in 2010. In 2015, our 5 kg coffee roaster became too small to meet the constantly growing demand. So, we decided to purchase a 15 kg roaster and finally, in order to roast our coffee with even more care and consistency, we purchased a 35 kg Loring S35 Kestrel in 2018. The machine uses about 70% less energy than similar coffee roaster models available on the market today. In April 2019, our roastery moved to a bigger home: A building in Zurich Altstetten that was formerly used by the Swiss Federal Railways (SBB) as a train workshop.
