Description

The Bynecool Project is a collaboration with carefully selected coffee farmers in Chikmagalur, Karnataka, who practice regenerative farming. The beans are carefully picked, dried, and processed on the farm before undergoing the Monsooned Malabar method, a traditional process that exposes the beans to monsoon winds for 12–16 weeks.

This process transforms the coffee: it swells, changes color to a pale straw-gold, loses acidity, and develops rich earthy, chocolatey and nutty flavors with a full, harmonious body.

Valued for its sweetness, crema, and balance, Monsooned Malabar is a highly sought-after specialty coffee, now available as a single-origin coffee from ViCAFE.
